Summer-Fresh Quinoa Salad

Ingredients
  • 2 cups pre-drained quinoa
  • 2.5 cups of water
  • 1 cucumber; cut into cubes
  • 2 roma tomatoes; cut into cubes
  • ½ sweet onion; cut into cubes
  • 1 sweet orange pepper; cut into cubes
  • 4 tablespoons olive oil
  • 1 tablespoon dried basil
  • salt & pepper to taste

Instructions
  1. In a pot, bring water to a boil, add in quinoa and cover with lid, reduce to low heat and cook for 20 minutes.
  2. In the meantime, chop all veggies, add in basil, salt & pepper and oilve oil.
  3. When quinoa is cooked, add in veggie/herb mix; stir and refrigerate for 1 hour.
  4. Serve cold.

That looks gorgeous! I think I’ve had quinoa before, but just plain and I did like it :)
