
Ingredients:
- 1 package baby spinach
- 1 pk cherry tomatoes; cut in halves
- 1/2 red onion; chopped
- 1 red pepper; chopped
- 1 green pepper; chopped
- 1/4 cup lightly grated mozzarella cheese

Directions:
- Chop all vegetables and place in large bowl.
- Follow chicken recipe and top salad with the chicken
- Sprinkle the shredded mozzarella cheese
- OPTIONAL: Top with a small amount of ranch dressing
