Spinach Salad with Crispy Gluten Free Chicken

Ingredients:

  • 1 package baby spinach
  • 1 pk cherry tomatoes; cut in halves
  • 1/2 red onion; chopped
  • 1 red pepper; chopped
  • 1 green pepper; chopped
  • 1/4 cup lightly grated mozzarella cheese

For the crispy chicken – use this gluten free recipe: Homemade Gluten Free Chicken Fingers

Directions:

  1. Chop all vegetables and place in large bowl.
  2. Follow chicken recipe and top salad with the chicken
  3. Sprinkle the shredded mozzarella cheese
  4. OPTIONAL: Top with a small amount of ranch dressing
