Quick & On The Go Gluten Free Breakfast

This recipe is amazing for the mornings because you get everything in a typical breakfast, but you can take it on the go. Making the night before for the next morning is another way to cut down on the time. They can be reheated and will last in your fridge for a few days!

Quick and Easy On-The-Go Gluten Free Breakfast

Breakfast of toast, egg and bacon perfect for those rushed mornings (make the night before and heat up!)
Ingredients
  • 6 slices of gluten free bread
  • 6 eggs
  • 6 slices bacon
  • salt and pepper to taste

Instructions
  1. Preheat the oven to 375
  2. In a skillet lightly cook the bacon strips – about 4 minutes on each side
  3. Lightly butter the bottoms of a muffin tin
  4. Using gluten free bread – cut a circle hole out and lightly thin using a rolling pin
  5. Place one circle of bread on the bottom of the muffin tin; pressing firmly.
  6. Place a strip of bacon and top with 1 cracked egg; season with salt and pepper
  7. Continue for the other 5 muffins
  8. Place in the preheated oven and cook for 20-25 minutes

Could you do a nutritional chart with calories, protein,carbohydrates etc. I’m doing a project on this diet and am interested in knowing the nutritional facts for some of your gfcf recipes
