2 boneless, skinless chicken breasts; cubed 1/2 cup gluten free soy sauce 1 cup gluten free chicken broth 1 cup frozen corn kernels 2 Tbs olive oil 1 sweet onion; chopped grated ginger fresh pepper and salt 2 Tbs peanut butter 2 cups brown rice
Prepare brown rice according to directions on package In a skillet heat olive oil. Brown chicken for 3-5 minutes. Add chopped onion and frozen corn Pour chicken broth, soy sauce, ginger, pepper and salt. Simmer for 10 minutes. Add the peanut butter – stirring until melted. Continue to simmer until thickened Place chicken and sauce on top of rice and enjoy!
