Gluten Free Peanut Chicken on Brown Rice

Ingredients:

  • 2 boneless, skinless chicken breasts; cubed
  • 1/2 cup gluten free soy sauce
  • 1 cup gluten free chicken broth
  • 1 cup frozen corn kernels
  • 2 Tbs olive oil
  • 1 sweet onion; chopped
  • grated ginger
  • fresh pepper and salt
  • 2 Tbs peanut butter
  • 2 cups brown rice

Directions:

  1. Prepare brown rice according to directions on package
  2. In a skillet heat olive oil. Brown chicken for 3-5 minutes. Add chopped onion and frozen corn
  3. Pour chicken broth, soy sauce, ginger, pepper and salt. Simmer for 10 minutes.
  4. Add the peanut butter – stirring until melted. Continue to simmer until thickened
  5. Place chicken and sauce on top of rice and enjoy!
