I am always on the hunt for new breakfast ideas that are relatively quick and is sort of outside the regular bacon-&-egg box. There are mornings where I am craving something heavier and sweeter (mmm, French Toast), but don’t also want my egg too. That’s where the delicious fried egg sandwich comes it. This recipe is certainly not for the every morning due to the sweet-factor, but for those special mornings it is a huge hit!
Maple Cinnamon Fried Egg Breakfast Sandwich

Recipe type: Gluten Free Breakfast

Ingredients
- 2 slices gluten free bread
- 1 egg
- 2tbs butter (or dairy free margarine)
- ½ teaspoon cinnamon
- 1 teaspoon white sugar
- maple syrup {to taste}
Instructions
- In a small bowl, mix together cinnamon and sugar
- Heat a non-stick fry-pan on medium heat and butter both sides of each slice of bread. Sprinkle with the cinnamon sugar mixture.
- One at a time, place the buttered bread on the heated fry-pan until toasted, flip over and toast the other side. Repeat for second slice
- Crack an egg on the fry-pan, heat for approximately 5 minutes until egg-white solidifies. Carefully flip the egg and cook the other side for another 2-3 minutes.
- Place cooked egg on once slice of bread. Drizzle maple syrup over the egg and top the sandwich with the other toasted slice.
- Cut in half and enjoy the awesome

So simple yet so amazing! I make this type of sandwich regularly but the addition of cinnamon and sugar takes this breakfast over the top! Sweet, savory, crunchy and filling – what more could you ask for in a breakfast meal!? Great job
