Homemade Gluten Free Blueberry Pie

Blueberry pie goes a long way back for my family and I. Way back 11 years ago when my husband and I had our first date (June 25th) I brought him a homemade blueberry pie. Ryan’s birthday was only a few days later so I thought bringing him a blueberry pie that I made would leave a lasting impression.

Well it did and still to this day I bake him a blueberry pie for his birthday.  Since way back when I was not diagnosed with Celiac Disease I was able to make him a regular gluten pie.  This was actually the first year that I made a gluten free version so we could all eat it.

This crust is NOT casein free, but for those who are only of a gluten free diet this pie crust is incredible! Only needs a few simple items and is pretty easy to work with.

Pie Crust:

Ingredients:

  • 4 ounces cream cheese (half a block)
  • 2 Tbs butter
  • 3/4 cup cornstarch
  • salt (pinch)
  • 1 tsp sugar
  • 1/4 tsp guar gum
  • 1/4 tsp baking soda

* Since I made a top for this pie – I did two batches of the ingredients in separate bowls so they would be even

Directions:

  1. Preheat oven to 400
  2. Combine all the ingredients in a medium-size bowl. The mixture will seem impossible but just when you think it is not going to work – the crumbly mixture will clump into a ball
  3. Place the dough on a sheet of wax paper. Cover with another sheet of paper and roll into a large circle.
  4. Remove the top sheet and turn the dough upside down into a 9-inch pie plate. Carefully remove the remaining sheet of paper. Trim, tuck, and pinch the dough at the edge of the pie plate.
  5. Pinching the dough between your fingers will help adhere it to the pie plate and reduce the chance of the crust’s sipping into the plate during baking.
  6. Prick the crust all over with a fork to deter air bubbles and slippage.
  7. Bake for approximately 5 minutes remove and fill with pie filling {ingredients and directions below}
  8. After pouring in the pie filling – flip the lid onto the pie and trim and press
  9. Bake in the preheated oven for 12 minutes or until golden brown
  10. Let cool, slice and enjoy!


Pie Filling :

Ingredients:

  • 2 pints blueberries
  • 1/3 cup sugar
  • 1/4 cup water
  • 2 tablespoons corn starch
  • 1/2 teaspoon vanilla extract

Directions:

  1. Rinse the blueberries. Place the blueberries and the remaining ingredients in a large, microwave-safe bowl. Stir well but gently.
  2. Microwave on high for approximately 7 minutes, stirring gently every 2 minutes or so. The juices should be clear, thickened, and boiling.
  3. Pour into the pre-baked crust.

This looks great!! I have never cooked with guar gum, but I will look for it next time I am at the store.
