Gluten Free & Diary Free Brownies

Gluten Free / Dairy (Casein) Free Brownies

Ingredients

  • 1/3 cup cocoa powder
  • 1/3 cup + 2 tablespoons dairy free margarine (melted)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup potato STARCH
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 eggs

Directions

  1. Preheat oven to 350F/180C
  2. In a medium bowl combine melted dairy free margarine, cocoa powder, sugar; mix until combined
  3. One at a time whisk in each egg and vanilla extract
  4. In a separate bowl mix together potato starch, baking powder and salt.
  5. Combine with the chocolate mixture and mix until smooth
  6. Pour into greased 8 inch square baking pan. Bake in preheated oven for 25-30 minutes
  7. Cool and chill; cut into squares; store in refrigerator

I can never have too many brownie recipes. They are like my favorite thing on earth!

My 3-year-old son had severe eczema until he was diagnosed with food allergies a few months back. I have a blog that shares our family’s battles with eczema, allergies, and asthma (yes, lucky guy has that too).
