Gluten Free Vegetable Stir Fry

Ingredients:

  • 1 zucchini; sliced
  • 1/2 spanish onion; chopped
  • 1/2 green pepper; chopped
  • 1/2 orange pepper; chopped
  • 1/2 cup broccoli; chopped
  • green beans; handful
  • cherry tomatoes; handful
  • 2 cloves garlic; minced
  • 1/2 cup low sodium gluten free soy sauce
  • 1/4 cup olive oil
  • 1tbs ginger (fresh or dried)
  • 1/2tsp crushed red pepper
  • 1/4 cup unsalted almonds
  • black pepper; to taste

Directions:

  1. In a large bowl combine all ingredients; stir together & let marinade for 1 hour
  2. In a pan over medium heat add marinated ingredients and cover with a lid.
  3. Stirring every few minutes cook for approx 15 minutes or until desired texture of vegetables (more firm=less time; softer=more time)
