
Ingredients:
- 1 zucchini; sliced
- 1/2 spanish onion; chopped
- 1/2 green pepper; chopped
- 1/2 orange pepper; chopped
- 1/2 cup broccoli; chopped
- green beans; handful
- cherry tomatoes; handful
- 2 cloves garlic; minced
- 1/2 cup low sodium gluten free soy sauce
- 1/4 cup olive oil
- 1tbs ginger (fresh or dried)
- 1/2tsp crushed red pepper
- 1/4 cup unsalted almonds
- black pepper; to taste
Directions:
- In a large bowl combine all ingredients; stir together & let marinade for 1 hour
- In a pan over medium heat add marinated ingredients and cover with a lid.
- Stirring every few minutes cook for approx 15 minutes or until desired texture of vegetables (more firm=less time; softer=more time)
