Today we celebrated my older daughter’s 3rd birthday – and what better way to celebrate then with a homemade 2 layered gluten free cake.
Gluten Free Vanilla Cake
Ingredients:
- 1/3 cup oil
- 3/4 cup sugar
- 2 eggs
- 1/2 cup plain yogurt
- 2 tsp. vanilla extract
- 3/4 cup + 2 tbsp cornstarch
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp guar gum
Directions:
- Preheat oven to 350
- Combine oil, sugar and eggs and mix until well blended; add vanilla extract and yogurt
- Add the rest of the ingredients and stir until smooth and blended
- Pour into oiled baking dish
- Cook for 30-40 minutes or until a dipped in toothpick comes out clean
Buttercream Icing
Ingredients:
- 1/2 cup shortening
- 1/2 cup butter
- 1 tsp vanilla extract
- 2 tbsp milk
- 4 cups icing (confectioners) sugar
Directions:
Blend well the shortening, butter, vanilla extract and milk. Add icing sugar 1 cup at a time until thick.
This is by far my favourite gluten free cake recipe. It is impressively moist (thank you yogurt) and has no complicated flour mixture or expensive pre-packaged mix. It has the perfect crumbly texture and really tastes like a gluten cake.
