| Tomato Basil Quiche with Spinach Salad {gluten and casein free} |
Quiche was one of my favourite things to eat when I was younger. I didn’t get it too often but LOVED eating asparagus or broccoli quiches. My mom made the best ones!
It had been about forever and then some since I have had one but really wanted the ‘taste’ of quiche so I decided to make a crustless one. Yes, I could make a gluten free crust, but as a super busy mom of 3 I wanted something quick, healthy and easy.

There are so many variations to make of this. If you are not eating dairy free adding any type of cheese to this {mmm Parmesan} would be incredible, or bacon if you are not vegetarian. I like to mix all different veggies and herbs and try something new all the time.
What are your favourite quiche ingredients?

Wow, that looks great. I will definitely be trying it!
Thank you Shari – you will have to let me know what you think of it !
Where do you get all of your recipe ideas from?
Some are modifications from what my mom used to cook or other recipes that contain gluten. Often times I look at various recipes and combine them into a gluten free, casein free variety or switch up a few ingredients here and there.
That is funny I just mad quiche the other night (I will be posting it sometime also) My favorites, bacon and cheese, broccoli and cheese…
This sounds great
It never occurred to me to try a crustless quiche. Thanks for posting!
Devan,
I am so excited to find gluten free recipes! I am allergic to wheat – like hives/anaphylactic reaction allergic. Do you have an allergy? Someone in your family?
