Gluten Free Tomato Basil Crustless Quiche

Tomato Basil Quiche with Spinach Salad {gluten and casein free}



Quiche was one of my favourite things to eat when I was younger. I didn’t get it too often but LOVED eating asparagus or broccoli quiches. My mom made the best ones! 

It had been about forever and then some since I have had one but really wanted the ‘taste’ of quiche so I decided to make a crustless one. Yes, I could make a gluten free crust, but as a super busy mom of 3 I wanted something quick, healthy and easy.

Keep Reading for Ingredients and Directions:
Ingredients:
  • 12 eggs
  • 1/2 cup almond milk {or milk if you are not dairy free}
  • 2 tomatoes; chopped
  • 2 Tbs dried basil
  • salt and pepper to taste

Directions:
  1. Preheat oven to 350
  2. Combine all ingredients and pour into baking dish {as simple as that!}
  3. Bake in preheated oven for 30 minutes

There are so many variations to make of this. If you are not eating dairy free adding any type of cheese to this {mmm Parmesan} would be incredible, or bacon if you are not vegetarian.  I like to mix all different veggies and herbs and try something new all the time.

Some are modifications from what my mom used to cook or other recipes that contain gluten. Often times I look at various recipes and combine them into a gluten free, casein free variety or switch up a few ingredients here and there.

Devan,
I am so excited to find gluten free recipes! I am allergic to wheat – like hives/anaphylactic reaction allergic. Do you have an allergy? Someone in your family?
