Gluten Free Rice Turkey Stuffing

I LOVE this stuffing. Perfect to go along with a big holiday turkey dinner or even as a side dish to any night’s regular meal.  Naturally gluten free this rice stuffing is simple, tasty and no one will know it is ‘gluten free’.


Ingredients:

  • 3 cups chicken broth
  • 1 1/2 cups uncooked brown rice
  • 1/3lb of bacon
  • 1/4 cup dried cranberries
  • 1 onion; diced
  • 2 celery stalks; chopped
  • 1 apple (I used Gala); chopped
  • salt & pepper to taste

Directions:

  1. In a pot add chicken broth and rice – boil for 45 minutes or until cooked
  2. In the mean time – in a medium sauce pan over medium heat cook bacon until crispy; crumble & reserve bacon drippings
  3. In the bacon drippings saute chopped onion, celery and apple until soft; add dried cranberries, salt & pepper and stir until well mixed
  4. When the rice has finished cooking – add to the onion, celery, apple mixture, crumbled bacon & stir until well blended
  5. Serve and enjoy!!
