I LOVE this stuffing. Perfect to go along with a big holiday turkey dinner or even as a side dish to any night’s regular meal. Naturally gluten free this rice stuffing is simple, tasty and no one will know it is ‘gluten free’.
Ingredients:
- 3 cups chicken broth
- 1 1/2 cups uncooked brown rice
- 1/3lb of bacon
- 1/4 cup dried cranberries
- 1 onion; diced
- 2 celery stalks; chopped
- 1 apple (I used Gala); chopped
- salt & pepper to taste
Directions:
- In a pot add chicken broth and rice – boil for 45 minutes or until cooked
- In the mean time – in a medium sauce pan over medium heat cook bacon until crispy; crumble & reserve bacon drippings
- In the bacon drippings saute chopped onion, celery and apple until soft; add dried cranberries, salt & pepper and stir until well mixed
- When the rice has finished cooking – add to the onion, celery, apple mixture, crumbled bacon & stir until well blended
- Serve and enjoy!!
