Gluten Free Potato Salad

Ingredients:

  • 5 yellow potatoes; skin on & cubed
  • 1/2 English cucumber; chopped
  • 3 stalks green onion; chopped
  • 1 clove garlic; minced
  • 1/4 cup crumbled bacon
  • 1/2 cup mayonnaise
  • salt & pepper to taste

Directions:

  1. Bring a large pot of water to boil and add the cubed potatoes.  Cook until tender (about 15 minutes); drain
  2. In a large bowl mix ingredients in with cooked potatoes; chill in refrigerator & serve
