Myth: Gluten Free Food Tastes Like Cardboard
Truth: Only if you are eating the wrong brands & using the wrong recipes!
I still remember that first gluten free product i bought. The first experience with gluten free the weekend after I was told i had celiac disease and now could not ‘eat the food i loved’ anymore {another myth!}.
I bought ‘bread‘. Gluten free, casein free, soy free, egg free, corn free – rice bread.
It was bad. Real bad.
I thought i was doomed.
Turns out i just had no idea what i was doing. I didnt need to buy a bread that was free from all that. I had no idea what products to look for & just how amazing many of the gluten free products were out there. Also – the HUGE variety of naturally gluten free snacks and meals.
I am a big texture eater so I was very worried about what the foods going to taste like. I can not do cardboard. or dry and crumby. Turns out i did not/do not have to!
The texture is different – especially with some of the baked prepackaged foods but they are far from cardboard. My favourite gluten free breads are both free from casein as well and both are amazing in their own way. One is from my favourite gfree company that i can buy from my grocery store. It comes frozen (to extend the shelf life) and it is great! The key for that type of bread (frozen) is to defrost per useage and to lightly toast before using. My other favourite bread is one that i buy locally that is made fresh in the store so i can purchase it fresh from the oven. honestly, there is no difference {other then a price increase} then regular gluten bread. My husband LOVES it and guests can not tell the difference. Cookies — same thing!
Naturally gluten free foods – made at home is a whole different ball game & good for it’s own post & own myth. Fruit, vegetables, meats … all naturally gluten free.

I used to think this. But the longer I eat unprocessed food (been gf since September 2009 and df since November 2009), the more I think all *processed* food tastes like cardboard…or perfume…or metal.
I’d love to know what your favorite GFCF bread is. The only bread my kids will eat is Udi’s but I am trying to elimate corn and it is full of it. I think it may be time for me to enter the brave new (to me) world of bread making.

You are SO RIGHT!! All processed foods taste like cardboard &/or metal! I have really begun to notice that as well!
