Gluten Free Meatballs & Homemade Pasta Sauce

Ingredients:

Meatballs:

  • 1lb ground beef
  • 1 cup gluten free bread crumbs (or crushed rice crackers)
  • 1 egg
  • 1 tsp oregano
  • 1 tsp parsley
  • 1/4 tsp black pepper

Sauce:

  • 1 yellow onion; chopped
  • 2 cloves of garlic; minced
  • 1 can crushed tomatoes
  • 1 can tomato puree
  • 1 can whole peeled tomatoes
  • 1 bay leaf
  • 1/4 tsp black pepper
  • 1/2 tsp brown sugar
  • 3/4 tsp dried basil

Directions:

Meatballs:

  1. In a medium bowl combine ingredients and form into  12-16 meatballs
  2. Set aside

Sauce:

  1. In the crock pot combine all ingredients and lightly stir together

Preparations:

  1. Place meatballs into the sauce in the crock pot and cook on LOW temperature for 6-8 hours.
  2. When sauce is finished put crock pot on warm setting and prepare your gluten free pasta according to package directions.
  3. Turn off crock pot; place pasta and pour scoop of sauce and meatball onto prepared pasta.
