
When I tell someone that we’re on a gluten-free diet at home, I am often asked what we eat. I can say that when I first went on the diet, I was worried that our meals would be boring, that they would be limited and difficult to keep things fresh and new.
Guess what? There are a lot of meals that are naturally gluten-free or just in need of slight modification. They’re not any more expensive than a regular meal and they are perfect for the busy family — only taking on average 30 minutes to prepare and cook.
Tomato Soup and Grilled Eggplant
Perfect for lunch and quick to make when you use a commercial gluten-free & dairy-free soup (this one is Creamy Tomato by Imagine) and add in chopped green onion and some pepper. I paired it with grilled eggplant (marinated with balsamic vinegar, garlic, salt & pepper & grilled on medium heat for 5 minutes per side) for the perfect lunch meal.

I’m hungry just looking at all these delicious gluten free meals!
Even though I’ve been on-again-off-again with the gluten and wheat, I recently had a severe food reaction that made me KNOW I just have to stay away. Period.
I’ve been looking for some gluten free meals to try and I think I just found a bunch! Thanks for sharing ^.^

Lots of Asian-inspired recipes. Not only do they look good, they’re probably very savory and easy to make. as well. Also, have you tried Greek yogurt? They’re gluten-free. I think you mentioned being lactose intolerant? I am too, but non-fat Greek yogurts are tummy friendly.
