It gets HOT here in the summer. You wouldn’t think that of Canada but yeah, Ontario loves it’s humidity. Using the oven on days is near impossible unless you like boiling in over 40C (104F) heat – but that makes you crazy in my books.
The heat does not need to stop you from eating amazing desserts though. This week I made up a gluten free ice cream pie. Bonus: no baking!
Graham Style Crust:
Ingredients:
- 1 1/2 cups Kinnikinnick Graham Style Crumbs
- 1/4 cup melted butter
- 2 Tbs sugar
Directions:
- Combine ingredients until well blended
- Press into 9″ pie pan and refrigerate for 1 hour
Pie Toppings:
Ingredients:
- Vanilla flavour ice cream
- cherry pie filling
Directions:
- press ice cream unto prepared pie crust and smooth
- top with cherry pie filling
- place in freezer for about 1 hour
- cut and serve frozen
