Gluten Free Homemade Sushi

Ingredients:

  • 1 1/3 cup water
  • 1 cup white rice {short grain or milled}
  • 3 Tbs white sugar
  • 3 Tbs rice vinegar
  • 1 tsp salt
  • cucumber; thinly sliced
  • smoked salmon; thinly sliced
  • 4 seaweed sheets

*bamboo mat & sharp knife

{optional: avocado, tuna or crab}

Directions:

  1. In a medium pot boil water then add rice and simmer with lid for 20 minutes
  2. Stir in rice vinegar, sugar and salt
  3. On the bamboo mat centre one sheet of seaweed. Using wet hands spread thin layer of cooked rice; then add cucumber & salmon in a line in the centre
  4. Lift bamboo mat and roll seaweed pressing gently making a complete roll
  5. Slice each roll into 4-6 pieces using a sharp, wet knife
  6. Serve with wasabi and/or soy sauce.
