
Ingredients:
- 1 1/3 cup water
- 1 cup white rice {short grain or milled}
- 3 Tbs white sugar
- 3 Tbs rice vinegar
- 1 tsp salt
- cucumber; thinly sliced
- smoked salmon; thinly sliced
- 4 seaweed sheets
*bamboo mat & sharp knife
{optional: avocado, tuna or crab}
Directions:
- In a medium pot boil water then add rice and simmer with lid for 20 minutes
- Stir in rice vinegar, sugar and salt
- On the bamboo mat centre one sheet of seaweed. Using wet hands spread thin layer of cooked rice; then add cucumber & salmon in a line in the centre
- Lift bamboo mat and roll seaweed pressing gently making a complete roll
- Slice each roll into 4-6 pieces using a sharp, wet knife
- Serve with wasabi and/or soy sauce.
