Gluten Free Egg Salad Sandwich

Ingredients

  • 8 eggs
  • 1/2 cup mayonaise
  • 1 stem celery; minced
  • 2 dill pickles; minced
  • 1 clove garlic; minced
  • 1/4 cup bacon; cooked & crumbled
  • 1/2 sweet onion; chopped
  • salt & pepper to taste

Directions

  1. Place eggs in a saucepan & cover with cold water then bring to a boil. Cover with pot lid and remove from heat. Let eggs stand in hot water for 12 minutes. Remove from hot water, cool, peel & chop.
  2. In a large bowl combine all ingredients; mix and refrigerate for at least 1 hour
  3. Serve on gluten free bread as a sandwich or eat alone
