
Gluten Free Egg Salad Sandwich
Ingredients
- 8 eggs
- 1/2 cup mayonaise
- 1 stem celery; minced
- 2 dill pickles; minced
- 1 clove garlic; minced
- 1/4 cup bacon; cooked & crumbled
- 1/2 sweet onion; chopped
- salt & pepper to taste
Directions
- Place eggs in a saucepan & cover with cold water then bring to a boil. Cover with pot lid and remove from heat. Let eggs stand in hot water for 12 minutes. Remove from hot water, cool, peel & chop.
- In a large bowl combine all ingredients; mix and refrigerate for at least 1 hour
- Serve on gluten free bread as a sandwich or eat alone
