
Gluten Free Deep Fried Dill Pickles
Ingredients
- 6 pickles cut into spears
- 3 cups gluten free bread crumbs
- 2 cups cornstarch
- 3 Tbs yellow mustard
- salt & pepper to taste
- 4 eggs; beaten
- 2 cups vegetable oil (for frying)
Directions
- Preheat oil in a deep fryer or pot to 365 degrees F (180 degrees C)
- Using a paper towel take each spear of pickles and lightly dry each one
- In a small bowl combine beaten eggs and mustard; set aside
- In another small bowl combine corn starch, salt and pepper
- Doing a spear at a time dip into egg, then corn starch mixture, then back into egg and finally into the bread crumbs; put into fryer for about 30sec-1minute each or until bread crumbs are lightly browned
- Repeat for remaining pickle spears. {if you wish to use pickle chips the process is the same}
- Drain on paper towels and serve with dressing of your choice
{to make them non-gluten free just use “regular” bread crumbs}
