Gluten Free Broccoli Soup | Accustomed Chaos

Gluten and Dairy Free Broccoli Soup

Ingredients

  • 6 cups gluten free chicken or vegetable broth
  • 1 broccoli head & stalk {chopped}
  • 4 white potatoes {chopped}
  • 1 clove garlic {minced}
  • 1/2 cup onion {chopped}
  • salt and pepper to taste

Directions

  1. In a large pot bring broth to a boil; chopped potatoes, onions and broccoli
  2. Simmer for 10-12 minutes or until veggies are soft
  3. Add garlic, salt & pepper
  4. Using a blender add a cup of the veggies & broth at a time and blend until smooth
  5. Repeat for the pot - adding or removing broth to desired consistency (thinner soup = more broth; thicker soup = less broth)
