
Gluten and Dairy Free Broccoli Soup
Ingredients
- 6 cups gluten free chicken or vegetable broth
- 1 broccoli head & stalk {chopped}
- 4 white potatoes {chopped}
- 1 clove garlic {minced}
- 1/2 cup onion {chopped}
- salt and pepper to taste
Directions
- In a large pot bring broth to a boil; chopped potatoes, onions and broccoli
- Simmer for 10-12 minutes or until veggies are soft
- Add garlic, salt & pepper
- Using a blender add a cup of the veggies & broth at a time and blend until smooth
- Repeat for the pot - adding or removing broth to desired consistency (thinner soup = more broth; thicker soup = less broth)
