Ingredients:
- 1lb chicken thighs
- 1 can whole peeled tomatoes; mashed
- 2 cups chicken broth
- 1 medium spanish onion; chopped
- 2 cloves of garlic; minced
- 1 cup frozen corn kernels
- 1 tsp cumin powder
- 1 tsp chili powder
- 1 tsp salt
- 2 tsp black pepper
- *optional: hot sauce
Directions:
- In a crock pot line chicken at bottom and top with remaining ingredients
- Cook on low setting for 5-7 hours; shred chicken thighs with a fork
- Serve warm with a scoop of sour cream & tortilla chips
