
Ingredients:
- 2 chicken breasts; cubed
- 1Tbs olive oil
- 1 clove garlic; minced
- 1/2 sweet onion; chopped
- 1 red pepper; chopped
- 1/4 tsp crushed red pepper flakes
- 1/4 cup gluten free soy sauce
- 1.5 cups chicken broth
- 3Tbs creamy peanut butter
- black pepper to taste
- whole salt-free roasted cashews; cubed
Directions:
- In a medium sized skillet over medium heat add olive oil & onion and chicken for approx 8 minutes
- Add in garlic, pepper, red pepper, soy sauce & chicken broth and simmer for 8-12 minutes
- Stir in peanut butter & mix until melted and blended (will thicken up the sauce)
- Scoop onto cooked brown rice & sprinkle the top with crushed cashews
