Gluten Free Cashew Chicken

Ingredients:

  • 2 chicken breasts; cubed
  • 1Tbs olive oil
  • 1 clove garlic; minced
  • 1/2 sweet onion; chopped
  • 1 red pepper; chopped
  • 1/4 tsp crushed red pepper flakes
  • 1/4 cup gluten free soy sauce
  • 1.5 cups chicken broth
  • 3Tbs creamy peanut butter
  • black pepper to taste
  • whole salt-free roasted cashews; cubed

Directions:

  1. In a medium sized skillet over medium heat add olive oil & onion and chicken for approx 8 minutes
  2. Add in garlic, pepper, red pepper, soy sauce & chicken broth and simmer for 8-12 minutes
  3. Stir in peanut butter & mix until melted and blended (will thicken up the sauce)
  4. Scoop onto cooked brown rice & sprinkle the top with crushed cashews
