Gluten Free & Casein Free Bread (Homemade)

Bread is one of the very few things I miss about eating gluten.  Finding a gluten free bread that I really enjoyed and could eat without having to toast it {to improve texture} was hard. Until I came across the best homemade Soft Sandwich Bread recipe from Four Chickens.
I modified the recipe to make it casein free and used a different flour mixture.  The ingredient change did not change the taste – still amazing.

Ingredients:

  • 3 cups brown rice flour
  • 3 tsp guar gum
  • 4 tsp baking powder
  • 1 tsp salt
  • 4 Tbs sugar
  • 2 Tbs yeast
  • 1 cup Almond Milk
  • 1/2 cup water {room temp}
  • 2 tsp vinegar
  • 4 Tbs olive oil
  • 2 large eggs

Makes 1 loaf with a 9″x5″ loaf pan

Directions:

  1. Preheat oven to 375F and oil your bread pan
  2. In a small bowl dissolve yeast in 1/2 cup water and set aside for 10 minutes
  3. In a large bowl mix flour, sugar, guar gum and salt
  4. Add wet ingredients and yeast.
  5. Mix ingredients until well blended {use a hand or stand mixer}
  6. Pour mixture into pre-prepared pan and smooth top
  7. Place in a warm spot – cover with moist towel and let rise for 30-40 minutes
  8. Once it has risen bake in preheated oven for 20 minutes.
  9. Tent foil over bread and bake for additional 10 minutes
  10. Remove and let cool on cooling rack
