Bread is one of the very few things I miss about eating gluten. Finding a gluten free bread that I really enjoyed and could eat without having to toast it {to improve texture} was hard. Until I came across the best homemade Soft Sandwich Bread recipe from Four Chickens.
I modified the recipe to make it casein free and used a different flour mixture. The ingredient change did not change the taste – still amazing.
Ingredients:
- 3 cups brown rice flour
- 3 tsp guar gum
- 4 tsp baking powder
- 1 tsp salt
- 4 Tbs sugar
- 2 Tbs yeast
- 1 cup Almond Milk
- 1/2 cup water {room temp}
- 2 tsp vinegar
- 4 Tbs olive oil
- 2 large eggs
Makes 1 loaf with a 9″x5″ loaf pan
Directions:
- Preheat oven to 375F and oil your bread pan
- In a small bowl dissolve yeast in 1/2 cup water and set aside for 10 minutes
- In a large bowl mix flour, sugar, guar gum and salt
- Add wet ingredients and yeast.
- Mix ingredients until well blended {use a hand or stand mixer}
- Pour mixture into pre-prepared pan and smooth top
- Place in a warm spot – cover with moist towel and let rise for 30-40 minutes
- Once it has risen bake in preheated oven for 20 minutes.
- Tent foil over bread and bake for additional 10 minutes
- Remove and let cool on cooling rack
