
Gluten Free Beef & Broccoli on Fried Noodles
Ingredients
- 1 package gluten free corn spaghetti noodles
- 2 tablespoons gluten free soy sauce
- 3 tablespoons peanut satay sauce
- 1 teaspoon vegetable/canola oil
- 1 teaspoon fresh grated ginger
- 2 teaspoons garlic; minced
- 1 pound flank steak
- 1 onion; thinly sliced
- 10-12 mushrooms; cut in half
- 3 cups broccoli florets
- 1 tablespoon brown sugar
- 1/2 teaspoon curry powder
Directions
- Heat oil in a large nonstick fry pan or wok at medium heat
- Cut beef into strips and add to the pan; saute until lightly brown (about 5 minutes)
- Add garlic, pepper;1 teaspoon of garlic and sliced onions
- After about 5 minutes add in broccoli and mushrooms
- In a pot cook gluten free spaghetti noodles according to package. Drain and set aside
- In a small mixing bowl add brown sugar, 1 tablespoon of soy sauce, peanut satay sauce and remaining garlic; stir until well mixed
- Add the mixture to the beef and vegetables and stir until well coated. Reduce heat and simmer on low
- In the cooked and drained noodles add curry powder, remaining tablespoon of soy sauce and ginger. Mix until well coated.
- Add noodles to the beef and vegetables and mix until everything is heated well and coated.
- Serve hot as is or add some hot chili sauce
