Gluten Free Beef and Broccoli on Noodles

Gluten Free Beef & Broccoli on Fried Noodles

Ingredients

  • 1 package gluten free corn spaghetti noodles
  • 2 tablespoons gluten free soy sauce
  • 3 tablespoons peanut satay sauce
  • 1 teaspoon vegetable/canola oil
  • 1 teaspoon fresh grated ginger
  • 2 teaspoons garlic; minced
  • 1 pound flank steak
  • 1 onion; thinly sliced
  • 10-12 mushrooms; cut in half
  • 3 cups broccoli florets
  • 1 tablespoon brown sugar
  • 1/2 teaspoon curry powder

Directions

  1. Heat oil in a large nonstick fry pan or wok at medium heat
  2. Cut beef into strips and add to the pan; saute until lightly brown (about 5 minutes)
  3. Add garlic, pepper;1 teaspoon of garlic and sliced onions
  4. After about 5 minutes add in broccoli and mushrooms
  5. In a pot cook gluten free spaghetti noodles according to package. Drain and set aside
  6. In a small mixing bowl add brown sugar, 1 tablespoon of soy sauce, peanut satay sauce and remaining garlic; stir until well mixed
  7. Add the mixture to the beef and vegetables and stir until well coated. Reduce heat and simmer on low
  8. In the cooked and drained noodles add curry powder, remaining tablespoon of soy sauce and ginger. Mix until well coated.
  9. Add noodles to the beef and vegetables and mix until everything is heated well and coated.
  10. Serve hot as is or add some hot chili sauce
