Gluten & Casein Free Pancakes (Mix)

One of my favourite things to do on a weekend (usually a Sunday) is make a large breakfast for the family. Most mornings we eat fruit and cereal so I like to mix it up sometimes and do something larger, more exciting.

Pancakes are one of the family’s favourites and I am happy we don’t have to miss out on such a great breakfast even though we eat gluten and casein free.  I have tried quite a few different gluten & casein free pancake mixes and also ones from scratch and the family’s favourite is Kinnikinnick Pancake & Waffle Mix
 

What do I love about these pancakes?  The mix is really simple to put together – add egg, oil and your liquid (water, almond milk or dairy milk) stir together and then cook them up.  They cook up nice and fluffy and even my husband (who is ‘forced’ to eat gluten free) can not tell the difference with these and a regular gluten-containing pancake.  I use almond milk in the mix and top with vegan margarine then covered in syrup – pure awesome!
My kids like when I make carob pancakes (carob is like chocolate but is dairy free) or blueberry pancakes and they always eat an impressive amount of these.  Eating gluten & casein free doesn’t have to mean missing out on great food. I like to pair these pancakes up with scrambled eggs, fresh fruit and some bacon. Always a great way to start the weekend!
