I remember when I was first told I can’t eat gluten — my head spun wondering what was left to eat. Over the years I have realized that there eating gluten free has no limitations and I certainly don’t feel like I am missing out on anything. When Princess Bean was born and I went on a casein (all dairy protein) free diet on top of my gfree diet I was worried. Just like with the gfree diet though, I again realized that there are so many amazing options available.
Since I have begun to chat more and more about the diet we are on I am often met with the sad eyes. The people (who like me years ago) had no idea what limitations (or lack there of) comes with eating a gfcf (gluten free, casein free) diet brings. One of the biggest questions I am asked is “What do you eat then” and so I decided to start showing what I eat — right off my plate.
I have been taking photos with my phone of my breakfasts, snacks, lunches and dinners. Just to show what I honestly eat every night. No planning ahead, no fancy lighting or cameras. Sharing the meals that I cook (usually under 30 minutes) and directly off my plate as I sit down to eat.
