There is nothing better then on a rainy day or when you are sick then to have a warm, hearty beef stew. This is one of my favourites that my parents make and I made it for the first time this week.

- 4 cups beef stock (make your own)
- 2 chopped carrots
- 1/2 chopped onion
- 2 cubed potatoes
- olive oil
- pepper to taste
- garlic to taste
- 1 bay leaf
- 1lb cubed beef round
- 1/4 cup corn starch dissolved in water
Directions:
- Pour olive oil in pan and heat; add cubed beef and cook until just brown
- In a pot add the beef stock, vegetables and spices. then add the browned beef
- Bring to a boil; add lid and turn down temperature to simmer
- Cook for 3-4 hours
- Bring to a boil again and add dissolved corn starch; stir until thickened and serve warm
