Gluten & Casein Free Beef Stew

There is nothing better then on a rainy day or when you are sick then to have a warm, hearty beef stew.  This is one of my favourites that my parents make and I made it for the first time this week.

Ingredients:

  • 4 cups beef stock (make your own
  • 2 chopped carrots
  • 1/2 chopped onion
  • 2 cubed potatoes
  • olive oil
  • pepper to taste
  • garlic to taste
  • 1 bay leaf
  • 1lb cubed beef round
  • 1/4 cup corn starch dissolved in water

Directions:

  1. Pour olive oil in pan and heat; add cubed beef and cook until just brown
  2. In a pot add the beef stock, vegetables and spices. then add the browned beef
  3. Bring to a boil; add lid and turn down temperature to simmer
  4. Cook for 3-4 hours
  5. Bring to a boil again and add dissolved corn starch; stir until thickened and serve warm
