Baked Acorn Squash with Cinnamon and Nutmeg

Ingredients
  • 1 acorn squash, cut in half lengthwise & seeds removed
  • 2 tablespoons brown sugar
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 tablespoon vegan margarine (or butter if you're not dairy free)
Instructions
  1. Preheat oven to 350 degrees F
  2. Turn acorn squash cut-side down onto a cookie sheet. Place in preheated oven for about 35-40 minutes, until soft
  3. Remove from oven and place cut-side up in an oven-safe dish. Lightly scrape the squash with a fork
  4. Top squash with margarine, nutmeg, cinnamon and brown sugar
  5. Place back into preheated oven for another 20-30 minutes
