Maple Cinnamon Fried Egg Breakfast Sandwich

Ingredients
  • 2 slices gluten free bread
  • 1 egg
  • 2tbs butter (or dairy free margarine)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon white sugar
  • maple syrup {to taste}
Instructions
  1. In a small bowl, mix together cinnamon and sugar
  2. Heat a non-stick fry-pan on medium heat and butter both sides of each slice of bread. Sprinkle with the cinnamon sugar mixture.
  3. One at a time, place the buttered bread on the heated fry-pan until toasted, flip over and toast the other side. Repeat for second slice
  4. Crack an egg on the fry-pan, heat for approximately 5 minutes until egg-white solidifies. Carefully flip the egg and cook the other side for another 2-3 minutes.
  5. Place cooked egg on once slice of bread. Drizzle maple syrup over the egg and top the sandwich with the other toasted slice.
  6. Cut in half and enjoy the awesome
