Breakfast of toast, egg and bacon perfect for those rushed mornings (make the night before and heat up!)
- 6 slices of gluten free bread
- 6 eggs
- 6 slices bacon
- salt and pepper to taste
- Preheat the oven to 375
- In a skillet lightly cook the bacon strips - about 4 minutes on each side
- Lightly butter the bottoms of a muffin tin
- Using gluten free bread - cut a circle hole out and lightly thin using a rolling pin
- Place one circle of bread on the bottom of the muffin tin; pressing firmly.
- Place a strip of bacon and top with 1 cracked egg; season with salt and pepper
- Continue for the other 5 muffins
- Place in the preheated oven and cook for 20-25 minutes
