Quick and Easy On-The-Go Gluten Free Breakfast

Breakfast of toast, egg and bacon perfect for those rushed mornings (make the night before and heat up!)
Ingredients
  • 6 slices of gluten free bread
  • 6 eggs
  • 6 slices bacon
  • salt and pepper to taste
Instructions
  1. Preheat the oven to 375
  2. In a skillet lightly cook the bacon strips - about 4 minutes on each side
  3. Lightly butter the bottoms of a muffin tin
  4. Using gluten free bread - cut a circle hole out and lightly thin using a rolling pin
  5. Place one circle of bread on the bottom of the muffin tin; pressing firmly.
  6. Place a strip of bacon and top with 1 cracked egg; season with salt and pepper
  7. Continue for the other 5 muffins
  8. Place in the preheated oven and cook for 20-25 minutes
