I have been trying to increase my metabolism since it decided to go at a slow climb thanks to some hormonal imbalances and a pretty serious gluten contamination. When this happens, it seems like my stomach can’t handle eating much of anything as well as extreme fatigue and the only way to get through it is to eat — often and healthily and to take care of myself.
One way I am trying to do this is to make sure I eat breakfast, no matter how crazy or busy my mornings are, it’s important and it sets my whole day up right. Since I don’t have a whole lot of time to make or eat food and I want the best “bang for my buck”, my go-to breakfast is this amazing gluten-free and dairy-free smoothie. It’s got the power punches of spinach, green tea and fruits all in one serving — and it tastes amazing.
- 1 cup baby spinach
- 5 strawberries; tops cut off
- 1 cup of strong brewed green tea
- 1 teaspoon honey
- 2 kiwi; pealed (or ¼ cup blueberries)
- In a blender, add all ingredients and blend until fruit and spinach are liquified and smooth.
- Serve immediately
Try experimenting with different fruits, try adding Greek yogurt or avocado. Add in a spice like cinnamon and get the perfect taste-profile you like. Such a delicious way to make sure you’re getting the right nutrients and it’s perfect for any busy day — no excuses!
