Celiac Disease 101: The Gluten Free Diet

Treatment for celiac disease is a life long gluten free diet.  So to understand what that means you need to know what gluten is.

Gluten is a protein found in wheat (including spelt & kamut), barley, rye and oats. Gluten is what gives elasticity to breads, doughs & helps it keep it’s texture and is also used as a food additive for flavoring or thickening.

Common Products With Gluten:

  • bread
  • pasta
  • cookies
  • crackers
  • pizza
  • pastries
  • donuts
  • crackers
  • soups
  • gravy
  • broths
  • soy sauces

& that is just a few.

Common names that ‘gluten’ is also called:

  • wheat
  • rye
  • oats
  • kamut
  • spelt
  • barley
  • bran
  • food starch
  • malt
  • ‘natural flavoring’ / ‘natural spices’
  • thickeners
  • triticum
  • roux
  • graham flour
  • filler
  • Brewer’s yeast

Thanks for the info – my daughter’s 2nd celiac panel came back positive so we’ll be visiting the GI tomorrow. :-/
