
Gluten and Dairy Free Basil Pesto Pasta
Ingredients
- 1 package Gluten Free Pasta
- 2 cups fresh basil leaves (tightly packed)
- 2/3 cup extra virgin olive oil
- 2 cloves garlic
- 1/4 cup pine nuts
- salt and pepper to taste
Directions
- Cook pasta noodles according to package instructions
- In a blender or food processor combine basil, pine nuts, garlic, salt and pepper and olive oil; blend until creamy smooth
- Pour over pasta- mix and serve
Note: To ‘beef’ up your pesto pasta dinner add cooked chicken breast and sauteed mushrooms. If you don’t need to eat gluten free use any noodle you like. If you don’t need to eat dairy free add 1/2 cup grated parmesan cheese
