
Baked Acorn Squash with Cinnamon and Nutmeg

Ingredients
- 1 acorn squash, cut in half lengthwise & seeds removed
- 2 tablespoons brown sugar
- 1 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1 tablespoon vegan margarine (or butter if you’re not dairy free)
Instructions
- Preheat oven to 350 degrees F
- Turn acorn squash cut-side down onto a cookie sheet. Place in preheated oven for about 35-40 minutes, until soft
- Remove from oven and place cut-side up in an oven-safe dish. Lightly scrape the squash with a fork
- Top squash with margarine, nutmeg, cinnamon and brown sugar
- Place back into preheated oven for another 20-30 minutes
