Bacon-Sautéed Brussel Sprout Leaves

Ingredients
  • 6 slices bacon
  • 1 pound brussel sprouts
  • salt and pepper to taste

Instructions
  1. In a fry pan over low-medium heat cook bacon until crispy; chop up and put aside
  2. Rinse and drain brussel sprouts. Cut about ¼ inch off the stem end of each sprout and begin peeling off the leaves. W Repeat to peel all leaves from sprouts; discard cores.
  3. Using the same fry pan as the bacon (leaving in the bacon grease) over medium heat add in the brussel sprout leaves and salt and pepper
  4. Stir until sprout leaves are bright green and slightly wilted but still crunchy, about 3 minutes. Remove from heat and add in the chopped bacon set aside earlier

I love brussel sprouts and bacon (of course) but I never thought about pulling the leaves off. Similar to sauteed cabbage I think.
