It’s only been the past 18 months or so that I have really gotten to love avocado. It was a food that I didn’t consume growing up and with all the talk about it being so good for your health, I gave it a try and now I love it. I have been using avocados to make guacamole, as a replacement for mayo or sour cream and love to just eat a half for breakfast.
It also makes a great ingredient for appetizers — from the creamy taste to the popping green colour, it’s a great addition to the party table and a taste that so many love. Pair it up with another super-loved taste — bacon — and you’ve got an unstoppable treat.
- 6 slices of bacon
- 1 avocado
- salt and pepper to taste
- Cook bacon according to oven-bake directions – you can find the best way to cook bacon here
- While the bacon is cooking, cut avocado in half and scoop out insides. Mash together with salt and pepper.
- Once bacon has been removed from the oven and cooled, snap into bite sized pieces. Put a small spoon of avocado on one of the bite sized pieces and top with another piece making mini-sandwiches.
- Continue for remaining bacon. Serve right away or chill.
